Yikes, it’s been a while since I’ve updated this thing. After coming back from Christmas, my friend Jennifer came to visit from Kansas City and I’ve been getting over a pretty bad cold for the past week. Exciting!
So in the interest of putting something of substance in here for once, I’m going to steal Kit’s schtick temporarily and post a recipe for soup that I made for a New Year’s Eve party I went to. Enjoy!
2 pounds potatoes, cut into 1 inch cubes
1 pound chopped leek
3 bay leaves
1 quart vegetable stock
1 cup cream
2-4 ounces smoked salmon, finely chopped
4 tablespoons salmon roe, optional (I didn’t use it)
In a medium bowl, combine potatoes, leek, bay leaves, stock and cream and bring to boil. Cook until the potatoes and leek are cooked. Remove the bay leaves. Crush or blend the mixture until smooth and velvety.Transfer to soup plates. Just before serving, add a good lump of smoked salmon and a spoonful of salmon roe, if using, to each plate.
